Lumpia Wrapper
Ideal for Lumpiang Sariwa
Ingredients:
1 cup Peotraco Rice Flour
4 tbsps. Regular Peotraco All Purpose Flour
1/2 tsp. salt
2 medium-sized eggs
1 tablespoon cooking oil
2 cups water
Procedure:
1. Sift all dry ingredients twice.
2. In a separate bowl, beat the eggs. Add oil and water. pour this mixture into the dry ingredients to form a batter. mix thoroughly to get a uniform consistency.
3. Heat a non-stick frying pan and drizzle a little cooking oil on it.
4. Pour a little batter, swirling the pan to evenly distribute the batter.
5. Cook the batter until the crepe pulls away from the sides of the pan, for 2 minutes. Flip the crepe over and cook the other side for a minute.
6. Repeat till all batter is used.
Makes about 20 wrapper.
TIP: Stir batter to keep the mixture well blended before cooking each wrapper.
