Eight Treasure Soup
A traditional Chinese soup, thick and rich with lots of delicious ingredients to signify prosperity. Serve this as an entree for dinner or as a buffet item for parties. It is easy to prepare and easy on the budget.
Ingredients:
7 cups water
1/4 cup ground pork or
1/4 cup shredded chicken
1 egg (slightly beaten)
1/2 bouillon cube
1/4 cup celery stalks (chopped finely)
1/4 cup green peas or
bell pepper green
1/2 cup MACY'S CORNSTARCH
(dissolve in 1 cup water)
1/4 cup Tofu or Tokwa (finely chop)
1 T. white wine (optional)
1 T. sesame oil
1/4 cup green onions, finely chopped
1/4 cup sweet corn
1/4 cup button mushroom, minced
1/2 T. soy sauce
Salt & pepper to taste
1. Boil cups of water with onions, carrots, bouillon, chicken or ground pork. Skim and remove all unwanted fat from top of stock. Boil until carrots are tender.
2. Add celery, mushrooms, tofu sweet corn and green peas one at a time.
3. Mix together the remaining 1 cup of water with the MACY'S CORNSTARCH. Stir into the soup until clear and thick.
4. Remove from heat and blend beaten egg.
5. Pour in wine, sesame oil and green onion.
